Mom's Chicken

I first remember Mom making this chicken recipe in highschool. She'd make it some Fridays or Saturdays. I fondly remember it sitting on the stove top waiting to be tupperwared. I'd sneak through the kitchen every few minutes and steal chicken chunks from the pan. It's so delicious and easy and healthy (only 5 pts per serving for the WW folks not including the rice.) It is comfort food to me, probably because Mom made it, I could eat any time of day and I crave it when I'm sick.

Mom doesn't call it a recipe. She calls it ingredients thrown together. I've made it a recipe here for you.

1.25 lbs boneless skinless chicken tenders (cut into chunks)
1 yellow onion (chunky sliced or chopped)
1 green bell pepper (chunky sliced)
1 tbs olive oil
garlic salt
pepper
yellow rice cooked(2 pts per serving)

1) Heat oil in skillet until it sizzles when flicked with water
2) Start rice according to package instructions
3) garlic salt and pepper chicken on both sides
4) brown chicken on each side and add onions
5) when onions start to get translucent add peppers
6) continue to saute until peppers turn from bright green to forest green
7) rice and chicken should be finished at about the same time

This whole delicious feast takes only 20-25 minutes to make!
I serve it with the rice and baby green peas. And much to my Mom's chagrin I mix all my food together in bowl. YUMMMMMMMMMMMMMMMMMM.
